Ground Pork, Sweet Pepper & Mushroom Stir Fry

This recipe was adapted from a ground pork stir fry by Snacking in Sneakers and modified based on ingredients available in my kitchen.

Ingredients (Main)

  • 1 lb (450 g) ground pork
  • 2 sweet peppers, sliced
  • 8 oz (225 g) mushrooms, sliced
  • 2 shallots, finely diced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Juice of 1/2 lemon
  • Freshly ground black pepper, to taste

Ingredients (Optional)

  • Green onions, sliced
  • 1 tsp smoked paprika
  • Chili flakes
  • Sesame seeds

To Serve

  • Cooked white rice

Notes

  • Adapted using ingredients available at home.
  • Lemon was substituted for lime.
  • Shallots were added for additional flavor.
  • Smoked paprika makes an excellent Portuguese-inspired variation.
  • Leftovers keep well for 2–3 days in the refrigerator.
