Butternut Squash Soup
Ingredients
- 2 butternut squash (peeled and cut into cubes)
- 4 shallots or 2 large onions (chopped)
- 6 cloves garlic (chopped)
- 1 tsp salt
- Black pepper to taste
- 6 cups chicken broth
- Olive oil

- For a vegetarian version, substitute vegetable broth for chicken broth.
- Add a drizzle of cream or coconut milk for extra richness.
