Butternut Squash Soup

Ingredients

  • 2 butternut squash (peeled and cut into cubes)
  • 4 shallots or 2 large onions (chopped)
  • 6 cloves garlic (chopped)
  • 1 tsp salt
  • Black pepper to taste
  • 6 cups chicken broth
  • Olive oil

  • Large pot

Notes

  • For a vegetarian version, substitute vegetable broth for chicken broth.
  • Add a drizzle of cream or coconut milk for extra richness.
